Lately the heat in London has been discouraging me from my usual favourite hot curries and soups. I’ve been looking out for a recipes that will fill me up and keep me cool at the same time. Yesterday I whipped up some burritos for my partner and I and they were the perfect fast and healthy luch. The kidney beans filled us up and we were able to customise our burritos after we added some healthy key ingredients. 🙂
For these Healthy Burritos, you will need:
- 1 tin can of beans, rinse and strained (Your choice, I chose red kidney beans)
- 1 avocado
- A large handful of iceberg lettuce
- A handful of cherry tomatoes, cut into quarters
- One bell pepper (any colour, sliced)
- Lime Juice
- Cumin
- Sea salt
- Pepper
- Coriander
- Salsa, Hummus, Guacamole, or any other sauce of your choice
- 2-4 tortillas (whole wheat is best, but I made my own naughty flour tortillas as I didn’t feel like going out)
The prep work is easy for this lunch! I boiled the beans in a sauce pan to make sure they were nice and soft when I put them in my tortilla. Then I tossed in all of my veg and topped with my herbs and spices. A big scoop of the condiment of your choice to top it off (I chose hummus for the extra protein and healthy fats), and then you can simply roll up your little burrito and enjoy!
Perfect lunch for a hot day! If you’re not into wheat or are living gluten-free – simply used the lettuce as a base and enjoy this as a salad or burrito bowl instead. 🙂 Let me know how your burritos turn out! x
