My quest for the perfect veggie burger recipe continues! The other day I whipped up these patties using kidney beans and courgettes (a.k.a. zucchini for my Canadian readers). They were super fast to make and pretty tasty. Not perfect, so the quest continues, but good in a pinch if you’re looking to use up some leftover courgette like I was. 🙂
For these Courgette Bean Burgers, you will need:
- 1 small-medium sized courgette (zucchini)
- 1 can of kidney beans, rinsed and strained
- 1/4 cup of instant oats
- 1 egg yolk (vegans can either leave this out or use another bonding agent of their choice)
- Sea Salt
- Fresh ground black pepper
- Dried herbs
- Garlic Powder
- Olive oil
Place your rinsed and strained kidney beans in a pot of boiling water and allow to cook for approx. 5 minutes, or until semi-soft. Once cooked, strain the beans and allow to cool. Grate your courgette with either a cheese grater or food processor to create small ribbons. Combine beans, courgette, egg yolk, oats, garlic, and seasonings in a bowl. Mix together well until all ingredients are evenly combined.
With clean hands, scoop a palm-sized ball of the bean mixture and roll it into a smooth ball. Once round, the patty can be flatted with a spoon or other utensil. My recipe made five patties for me, but you can change that amount by making small or bigger balls of mix. Once your patties are formed, fry in olive oil over low heat. I gave them about 6 minutes on each side to really allow them to crisp up on the outsides. While they’re frying, sprinkle with garlic powder, herbs, and salt and pepper.
Lately I haven’t felt like eating bread – it’s been making me feel a bit bloated. So this time I skipped the bread and served up these burgers on a bed of fresh lettuce from my friend’s garden. 🙂 I added a scoop of hummus (because who can resist that stuff?) and a bit of ketchup to add a bit more flavour. You can use whatever condiments you like, and you can certainly eat these burgers on a bun if that’s what you’re craving!
