Delicious Vegan Falafel


The best thing ever happened tonight… I accidentally made amazing falafel! It started out as an improvised veggie burger recipe, but when I tasted my mix pre-cooking (as I believe you always should do) I realised that it tasted a lot like my beloved favourite lunchtime protein kick. I decided to give it a go and roll my mix into little balls to fry and voila! They actually turned out! I always avoided making falafel because I figured it wouldn’t go well – so imagine my surprise when it did! Needless to say I am thrilled. 🙂

For these delicious vegan Falafel, you will need:

  • 1/2 cup coconut oil
  • 1 tsp sea salt
  • Pinch of black pepper
  • 1/2 tsp sweet paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp mustard seeds
  • 1/4 can chickpeas
  • 1/2 small courgette (zucchini)
  • 5 small mushrooms
  • 1/4 cup quick oats

Combine chickpeas, vegetables, and seasonings in a blender until loosely blended (it’s okay to leave some chunks). In a frying pan, melt your coconut oil over low heat. Roll your falafel mixture into even, well packed balls roughly the size of your palm. Place all balls into the fry pan and allow to fry until brown on each side. Roll them around until they are evenly cooked all around (mine took about 10 minutes total). That’s it! Easy, right?

I found these to be the perfect texture – moist and delicious! If you prefer your falafel to be a bit more dry, you can pop them in the oven for 10-15 minutes to make them a bit more crispy. You can wrap them up in a pita or just eat them plain with some hummus, greens, tomatoes, etc.
